Burr life in kilograms

An E65 or E80 with new burrs is zeroed and its Disc Distance Detector calibrated, in that order, the way the manual sets it out. Then it is set on your beans.
A grind-by-weight grinder is calibrated with a reference weight. It is never carried by the fork, and it goes back with a note on where it should stand: a counter that moves gives a dose that moves.
Mahlkönig states that non-original burrs void the warranty and can result in motor failure. If you want an aftermarket set in an EK43 we will fit it, and we will tell you that first.
Mahlkönig belongs to Hemro Group, with Ditting, Anfim and HeyCafé, and its US office is in Seattle. Two families do most of the work on a bar. The EK43 is the tall one: 98 mm burrs and one grinder for filter, espresso and retail bags. The E65 and E80 are the espresso grinders, and the W versions weigh every dose. A grinder that weighs coffee has a scale inside it, and a scale drifts in ways a timer never did.
98 mm cast steel burrs, 1,300 W. The EK43 weighs 26 kg and carries a hopper of about 1.5 kg. The S is the short version at 24.5 kg. Mahlkönig USA rates the burr set at about 6,000 kg of coffee at a medium setting.

65 mm special steel burrs, 580 W, 12.2 kg, a 1.2 kg hopper. GbS is Grind-by-Sync. The W weighs each dose on a load cell, and its manual asks for the weighing cell to be calibrated once a week or as required.
80 mm special steel burrs, 845 W, about 18 kg. The high-volume espresso grinder. The US store rates the 80 mm special steel set at about 1,500 kg.
The generation before Grind-by-Sync. Mahlkönig USA lists both GbW models as no longer available. Burr sets, load cells and the disc distance board are still sold as parts.

Out of the catalogue and still in service. The K30 takes the same 65 mm burr set as the E65. The PEAK shares the 80 mm cast steel set with the E80.
The home range. The E64 WS has 64 mm burrs and lists at $1,199. The X54 and X64 SD sell for about half that and are serviced at the same grinder price.
Burr wear, measured in kilograms and not in years. Mahlkönig USA rates the 65 mm set at about 800 kg at a medium setting, and the E65S GbW manual says around 700. A bar using 15 kg a week is there in about a year. The burr change is quoted against the set: the 65 mm set lists at $164.99, the 80 mm special steel set at $419.99.
The manuals give three causes: a clogged grinding mechanism, a setting that is too fine, or a foreign object between the burrs. The chamber and spout are stripped and cleared, and the burrs are checked for a chipped edge before the grinder runs again.
The shear plate. It is a small plate in the drive, made to break before the motor does if the burrs seize on a stone or a screw. The part is cheap and it is a listed spare. What matters is finding what stopped the burrs, because a new plate on a damaged burr breaks again.
The thermal overcurrent breaker, and behind it a motor protector that cuts out when the winding is hot. The manual warns that repeated tripping can damage the motor winding. The E65S GbW is rated for 4 seconds on and 26 seconds off on a 110-127 V supply. A grinder asked for more than that in a rush is working outside its duty cycle.
On an E65S GbW a display that stays red and will not grind means the scale needs calibrating. Doses that wander point to a load cell that has shifted, an unstable counter or a worn flapper. The load cell is damaged by lifting the grinder by its portafilter fork.
After new burrs the manual requires two steps: the burrs are zeroed, then the Disc Distance Detector is calibrated. Skip the second and the number on the display no longer describes the gap between the burrs.
One flat figure for the service, whichever Mahlkönig it is. Burrs are a part and are quoted on top only when the measurement says they are due.

A typical call on an E65S GbW: doses that used to land within a few tenths of a gram now miss by a gram or more, and the bar assumes the burrs are finished. The bench starts with the scale. A reference weight goes on the fork and the load cell is calibrated. The flapper is checked for wear. Then the burrs are measured, and the kilograms through them are worked out from the bar’s weekly order. About an hour on the bench when the burrs stay, closer to two when they are changed and the grinder is zeroed again.
The EK43 has a reputation that makes people replace its burrs years early. The set is rated for about 6,000 kg and lists at $599.99. That is ten cents a kilo, if you use all of it. A cafe that changes EK burrs every two years on filter volume is throwing most of that set away. Clean the chamber on the schedule in the manual, which is every 2 to 5 days, have the zero point checked, and weigh what you grind. Buy burrs when the kilograms say so.
